Strawberry Thumbprint Cookies

(Makes 3 dozen)

Ingredients:

  • ½ cup butter

  • ¼ cup brown sugar, packed

  • 1 egg (separated)

  • ½ tsp. vanilla

  • 1 cup flour

  • ¼ tsp. salt

  • ¾ cup finely chopped walnuts

  • Strawberry jam

Instructions:

  1. Mix the butter, brown sugar, egg yolk, and vanilla until well combined.

  2. Blend in the flour and salt, and stir into the mixture.

  3. Shape into balls (1 tsp. each).

  4. Dip each ball into the beaten egg white and then roll into the nuts.

  5. Place 1 inch apart on an ungreased cookie sheet.

  6. Press your thumb into the center of each ball and fill the indentation with strawberry jam.

  7. Bake at 350°F for 10-12 minutes. If needed, fill the centers with more jam after baking.
