Sautéed Spinach with Garlic and Lemon

A fast and flavorful way to cook spinach that keeps it bright and delicious without becoming soggy.

Ingredients:

  • 1 lb fresh spinach, rinsed and drained

  • 1 tablespoon olive oil

  • 2 cloves garlic, sliced

  • Salt and pepper, to taste

  • Juice of half a lemon

  • Red pepper flakes (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the garlic and cook for 1-2 minutes until fragrant but not browned.

  3. Add the spinach, tossing frequently, and cook until just wilted, about 2-3 minutes.

  4. Season with salt, pepper, a squeeze of lemon juice, and a sprinkle of red pepper flakes if desired. 

  5. Serve immediately.
