Refrigerator Door Marinade

This recipe is named because initially I used the ingredients found on my refrigerator door in a moment of need. It has become a staple, and is also used in the sauce for broccoli salad. When marinating I suggest that you do it that day, or at the most overnight, do not over marinate. Rule of thumb: the more expensive the meat the less you marinate it.
Note: Part 1 (option 1 or 2)  will be combined with Part 2 below

Option 1: The hard way (lasts 7 - 10 days refrigerated) 

  • ¾ cup extra virgin olive oil

  • ¼ cup red wine vinegar 

  • 1 Tablespoon of Dijon mustard (do not add if using the shortcut recipe below)

  • 3 - 4 cloves of garlic finely minced (do not add if using the shortcut recipe below)

  • 3 tsp of Worcestershire sauce (do not add if using the shortcut recipe below)

  • ¼  freshly grated Parmesan cheese ?????

  • 3 tablespoon lemon juice freshly squeezed 

  • 1 tsp onion powder 

  • ½ tsp dried oregano

  • ½ tsp dried basil

  • ½ tsp cracked black pepper

  • Salt to taste (do not add if using the shortcut recipe below)

Option 2

  • 1 bottle Ken's Light Caesar dressing 16 ounces

  • + Part 2

  • ¾ cup of white vermouth

  • ¾ cup of soy sauce

  • ¼ cup of molasses

  • 2 tbsp of Dijon mustard (I prefer deli mustard) 

  • 1 tablespoon of bottled garlic 

  • 1 tablespoon of Worcestershire sauce

Options:

  • 2-3 whole anchovies (lasts 6-12 months)

  • Pinch or 2  of cayenne pepper (optional for heat) 

  • Or, 1 tablespoon Texas Petes

  • 1 - 2 tsp Pick-a-Pepper Sauce

Instructions

  1. Whisk vigorously, or use a hand immersion blender and set aside

  2. When you use fresh ingredients as above, which is always my preference, the marinade lasts in the refrigerator for 7 days. However, I like my marinade to last longer. 

  3. Hence this shortcut: which lasts 6 months when refrigerated

    Options:

    • 2-3 whole anchovies (lasts 6-12 months)

    • Pinch or 2  of cayenne pepper (optional for heat) 

    • Or, 1 tablespoon Texas Petes

    • 1 - 2 tsp Pick-a-Pepper Sauce

    Note: Always shake vigorously before using

    If you have a Mason jar which has measurements/graduations on the side you can make this without measuring - and store it in the jar. Add in order:

    1. Vermouth 

    2. Soy sauce 

    3. Molasses 

    4. Fresh dressing or Ken’s Caesar dressing

    5. All the other ingredients
