Lindley’s Buffalo Chicken Dip
Choose whether you prefer the classic blue cheese flavor or the milder ranch option. Blue cheese provides a bold, tangy flavor while ranch offers a creamier and more mild taste.
Ingredients:
1 whole chicken, roasted (or a store-bought rotisserie chicken) - shredded
1 lb cream cheese, softened
¾ - 1 cup buffalo sauce (Frank’s, Pete’s or your favorite)
Option 1 (Blue Cheese):
1 cup blue cheese dressing
1¼ cups blue cheese crumbles
1¼ cups white cheddar
Option 2 (Ranch):
1 cup ranch dressing
1¼ cups shredded sharp cheddar (extra for topping)
Optional - 1 cup celery, very finely chopped (for crunch)
Optional - ¼ cup finely chopped green onions for garnish
Instructions:
Preheat oven to 350°
Roast the Chicken: See roasted chicken recipe page #####? and cool. Or use rotisserie chicken - shred the meat.
Prepare the Dip: In a large mixing bowl, combine the cream cheese, buffalo sauce, and your choice of dressing (blue cheese or ranch). Add the shredded chicken last.
If using blue cheese: Stir in 1 cup of blue cheese crumbles and 1 cup of white cheddar cheese
If using ranch: Stir in 1¼ cups of shredded sharp cheddar cheese.
Very optional: Add celery: Mix in the celery
Bake: Spread the mixture in a shallow baking dish.
If using blue cheese: Top with the remaining blue cheese crumbles.
If using ranch: Top with extra cheddar cheese.
Bake at 350°F for 20-25 minutes, or until the dip is bubbling and the cheese on top is golden brown.
Broil (optional): For a crispy top, broil for 1-2 minutes, watching closely to avoid burning.
Garnish and Serve: Garnish with finely chopped green onions. Serve with tortilla chips, celery sticks, or crostini.
