Honey-Roasted Carrots

Roasting brings out the natural sweetness of carrots, and a touch of honey adds caramelized goodness.

Ingredients:

  • 1 lb carrots, peeled and cut into sticks or rounds

  • 2 Tbsp olive oil

  • 1 tablespoon honey

  • Salt and pepper, to taste

  • Fresh thyme or parsley, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. Toss the carrots with olive oil, honey, salt, and pepper. Spread in a single layer on the baking sheet.

  3. Roast for 20-25 minutes, stirring halfway through, until carrots are tender and caramelized.

  4. Garnish with fresh thyme or parsley before serving.
