Honey-Roasted Carrots
Roasting brings out the natural sweetness of carrots, and a touch of honey adds caramelized goodness.
Ingredients:
1 lb carrots, peeled and cut into sticks or rounds
2 Tbsp olive oil
1 tablespoon honey
Salt and pepper, to taste
Fresh thyme or parsley, for garnish (optional)
Instructions:
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Toss the carrots with olive oil, honey, salt, and pepper. Spread in a single layer on the baking sheet.
Roast for 20-25 minutes, stirring halfway through, until carrots are tender and caramelized.
Garnish with fresh thyme or parsley before serving.
