Green Beans Almondine

A classic French preparation that elevates green beans with toasted almonds and a hint of butter.

Ingredients:

  • 1 lb fresh green beans, trimmed

  • Salt, for blanching

  • 2 Tbsp butter

  • 1/3 cup sliced almonds

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • Zest of half a lemon (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and just tender. Drain and immediately plunge into ice water to stop cooking.

  2. In a large skillet, melt butter over medium heat. Add the almonds and toast for 2-3 minutes until golden brown.

  3. Add the blanched green beans and garlic, sautéing for an additional 2-3 minutes until warmed through.

  4. Season with salt, pepper, and lemon zest if desired, and serve warm.
