Green Beans Almondine
A classic French preparation that elevates green beans with toasted almonds and a hint of butter.
Ingredients:
1 lb fresh green beans, trimmed
Salt, for blanching
2 Tbsp butter
1/3 cup sliced almonds
1 clove garlic, minced
Salt and pepper, to taste
Zest of half a lemon (optional)
Instructions:
Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and just tender. Drain and immediately plunge into ice water to stop cooking.
In a large skillet, melt butter over medium heat. Add the almonds and toast for 2-3 minutes until golden brown.
Add the blanched green beans and garlic, sautéing for an additional 2-3 minutes until warmed through.
Season with salt, pepper, and lemon zest if desired, and serve warm.
