Coconut Butter Balls
(Makes 5 dozen)
Ingredients:
1 cup butter
⅓ cup sugar
2 tsp. vanilla
2 cups flour
10 oz. candied red cherries
1 egg white
1 tbsp. water
5 oz. coconut
Instructions:
Cream the butter, sugar, and vanilla together until fluffy.
Blend in the flour and a pinch of salt.
Combine the mixtures. Chill if soft.
Shape into balls (1 tsp. each) around a cherry to make 1" balls.
Beat the egg white with water.
Dip each ball into the egg white mixture, then into the coconut.
Bake on a greased cookie sheet at 350°F for 15-18 minutes.
