Coconut Butter Balls

(Makes 5 dozen)

Ingredients:

  • 1 cup butter

  • ⅓ cup sugar

  • 2 tsp. vanilla

  • 2 cups flour

  • 10 oz. candied red cherries

  • 1 egg white

  • 1 tbsp. water

  • 5 oz. coconut

Instructions:

  1. Cream the butter, sugar, and vanilla together until fluffy.

  2. Blend in the flour and a pinch of salt.

  3. Combine the mixtures. Chill if soft.

  4. Shape into balls (1 tsp. each) around a cherry to make 1" balls.

  5. Beat the egg white with water.

  6. Dip each ball into the egg white mixture, then into the coconut.

  7. Bake on a greased cookie sheet at 350°F for 15-18 minutes.
