Classic Hot Cocoa with Dutch-Process Cocoa

This hot cocoa is lighter but deeply flavorful, thanks to Dutch-process cocoa. It’s smooth and comforting, perfect for cozy evenings.

Ingredients

  • 2 Tbsp Dutch-process cocoa powder

  • 2 Tbsp granulated sugar

  • 1 pinch of salt

  • 1 cup whole milk (or milk of choice)

  • 1/4 tsp vanilla extract

  • Whipped cream or marshmallows, for serving

Instructions

  1. Mix the Cocoa and Sugar: In a small saucepan, whisk together the cocoa powder, sugar, and salt.

  2. Form a Paste: Add a splash of milk (about 2 Tbsp) to the cocoa mixture, stirring to form a smooth paste. This helps dissolve the cocoa and sugar for a smoother drink.

  3. Heat the Milk: Place the saucepan over medium heat and gradually add the remaining milk, stirring continuously until the mixture is hot. Avoid boiling, as this can scorch the milk.

  4. Add Vanilla: Once hot, remove from heat and stir in the vanilla extract.

  5. Serve: Pour the hot cocoa into a mug and top with whipped cream or marshmallows if desired.

  6. Enjoy: This classic hot cocoa is best enjoyed immediately, warm and creamy.

Tips for Best Results

  • Quality Ingredients: Use high-quality dark chocolate for hot chocolate and Dutch-process cocoa for hot cocoa to get the richest flavor.

  • Adjust Sweetness: Both recipes can be adjusted to taste with additional sugar or sweeteners, but less is typically needed for the hot chocolate due to the richness of the melted chocolate.
