Classic Creamed Spinach
Ingredients
1 lb fresh spinach, rinsed and stems removed (or use 1 lb frozen spinach, thawed and well-drained)
2 Tbsp butter
1 small onion, finely diced
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup milk
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Freshly grated nutmeg (optional, about a pinch)
Instructions
Prepare the Spinach: If using fresh spinach, blanch it by adding it to a pot of boiling water for 1-2 minutes until wilted. Drain well and plunge into ice water to stop the cooking. Squeeze out any excess water and chop the spinach. (Skip this step if using thawed frozen spinach.)
Sauté the Aromatics: In a large skillet or saucepan, melt the butter over medium heat. Add the onion and cook until softened, about 3-4 minutes.
Add the garlic and cook for another minute, until fragrant.
Add Cream and Milk: Stir in the heavy cream and milk, and bring the mixture to a gentle simmer.
Combine and Cook: Add the chopped spinach to the cream mixture, stirring to combine. Allow it to simmer for about 5 minutes, until the cream thickens and coats the spinach.
Season and Serve: Stir in the Parmesan cheese, and season with salt, pepper, and a pinch of freshly grated nutmeg if desired.
Serve hot as a creamy, comforting side dish.
